These caramel filled cookies are the perfect fall treat - great for parties, football season, holidays and plain ol' snacking. They remind me of going to the fair when I was younger and picking out the shiniest most captivating caramel candy apple my eyes could find!
This recipe itself is simple and minimal in effort. Plus, the smell of these cookies baking in the oven is enough to make your mouth water for that heavenly taste of sultry fall.

Before you get started be sure to gather the following Ingredients:

Time Prep: 10min
Total time: 24mins
Serves: 40 Cookies
Step 1: Preheat your oven to 350.
Step 2: Cut a piece of parchment paper to fit your baking sheet.
Step 3: Mix together salt, sugar, butter and 10 packets of apple cider mix.
Step 4: Beat in eggs vanilla extract, and cinnamon.
Step 5: In a separate mixing bowl mix flour, baking soda, baking powder.
Step 6: Combine the flour mixture into the batter and mix until well combined.
Step 7: Scoop 2 tablespoons the dough to form a small ball and place a caramel square in the middle then fold the dough over the caramel until it is completely hidden in the middle of the ball.
Step 8: Place the ball of dough with caramel on the baking sheet.
Step 9: Repeat steps 7 and 8 placing each dough ball 2-3 inches apart.
Step 10: Bake 12-14 mins.
Step 11: Cool cookies on a cooling rack when done.
The cookies taste the best when they are warm and melted in the middle.
